If you’ve never made ceviche this is a great recipe! Now, if you have made ceviche but never made it with raw shrimp you will be in for a educational surprise.

This recipe will provide a list of ingredients that will actually cook the shrimp while it marinades right in the refrigerator. That’s right! No need to use heat to cook this shrimp.

No need to precooked shrimp as using a citrus marinade will cook the shrimp as it is soaking in the juices.

How to Make Shrimp Ceviche

That’s right! No need to pre-cook shrimp when using this recipe. Using a combination of citric juices will actually turn your raw shrimp into cooked shrimp.

Ingredients:

  • 1 pound raw shrimp (I usually buy frozen raw shrimp easy-peel shell-on 50-60 shrimp per pound). If you are uncomfortable using raw shrimp cooked shrimp can be used.
  • 1-2 jalapenos minced (ribs and seeds removed)
  • 1 small red onion diced
  • 1 cup Roma tomatoes deseeded and diced
  • 3/4 cup cilantro leaves chopped
  • 1 avocado peeled and chopped
  • 3/4 cup lime juice (about 4 fresh limes)
  • 1/4 cup lemon juice (about 2-3 fresh lemons)
  • 1/3 cup orange juice
  • salt to taste
  • tortilla corn chips for serving

Instructions:

  1. Thaw shrimp according to package instructions. Remove entire shell and discard. Cut shrimp into four sections and place in a medium sized bowl.
  2. Dice onion.
  3. Slice jalapeno, remove ribs, seeds, and mince.
  4. Slice tomatoes in half. Deseed and dice tomatoes.
  5. Chop cilantro leaves (I love this kitchen tool to chop fresh herbs).
  6. Place all chopped ingredients in shrimp bowl. Add juices and stir. Make sure all shrimp is submerged in the citrus marinade.
  7. Cover shrimp bowl and place in refrigerator for 6-8 hours. Note: if using cooked shrimp then marinade for only 30 minutes to an hour.
  8. Remove from refrigerator. Check to make sure the shrimp has cook or in other words, make sure it is all white and firm. Drain juice and reserve for later if needed. Place shrimp mixture back in bowl.
  9. Now, for the avocado! The avocado is saved for last and added right before serving. So, slice the avocado in half, remove seed and skin. Dice and dip into citrus juice and then add to shrimp bowl. Stir all ingredients together and transfer to a serving bowl.
  10. Serve with tortilla corn chips and enjoy!
