This ham and cheese crustless quiche recipe is incredibly easy to make, and it will be a hit with your family! Perfect for a fast holiday dish, it can also be served for breakfast, brunch, or even dinner all year long!

Although I love a good meal around the holidays, I’m all for easy, simple, and anything that will help me to stress less and take the overwhelm out of the season.

A few years ago, I developed a recipe for a delicious crustless quiche that will satisfy your family’s longing for a more hearty holiday breakfast but will only take you minutes in the kitchen.

Super cheesy, super easy: This grain-free, crustless quiche is perfect for a special breakfast, easy dinner–or even to take to a potluck brunch.

Ham and Cheese Crustless Quiche

Yield 6 servings

Ingredients

  • 2 cups cheddar cheese, shredded and divided (add more to make it extra cheesy)
  • 1⁄2 cup salsa, divided
  • 1 cup milk
  • 3 eggs
  • 16 oz uncured ham, chopped (add more for meat lovers)

Instructions

1. Grease 9” pie plate.

2. Cover bottom of plate with 1 cup cheese.

3. Spread 1⁄4 cup salsa on top of cheese. Fight the urge to use more than this, as it will make the quiche watery.

4. Cover salsa layer with 1 cup cheese.

5. Spread remaining 1⁄4 cup salsa on top of cheese. Fight the urge to use more than this, as it will make the quiche watery.

6. Beat eggs and milk until well combined.

7. Mix meat into egg mixture.

8. Pour egg mixture over cheese/salsa layers.

9. Bake for 45 minutes on 375F. Let “set” for 10-15 minutes before serving.

Notes

*I love to keep uncured ham lunch meat on hand to fry up for quick breakfasts year-round, use in sandwiches or wraps for my kids' lunches, and even serve as the protein portion of a light supper. It's a staple at our house!

    My variation would be to omit the salsa and add use a mix of a few different cheeses.
    I’d also probably double it and make in a 9×13 pan.

    This looks great! I love the crustless version. I would also omit the salsa–some of my little ones aren’t terribly fond of it. But, they do love green peppers and mushrooms, so I would add those. Thanks for the recipe!

    I actually do make a quiche with crust using a pie crust and sometimes make it as a savory pie. I do not use salsa but a pico de gallo for 1 layer and sweet peppers and mushrooms for the 2nd.
    For a sweet savory version I use fruit and nuts and add onions and sweet peppers to eggs.
    The pie version has a cover so it goes further and the in crust version without cover is often favored.
    Thank you for sharing. For Sunday brunch I often make a crustless version but with veggies in it and I call it a frittata?

      It’s not an omelette, but I do think a frittata is a different name for a crustless quiche. For gluten-free and especially grain-free families, it’s nice to have something “quiche”-like without the crust. We love it and hope you will enjoy it too!

    I actually prefer a crustless quiche with ham. We also use ham to make baked hawaiin sliders…layer swiss, american, ham slices, and pineapple chunks on slider rolls or just bread. About 15 minutes at 350 degrees.

    We make a ham and mushroom with a little bit of onion, add 1 Tbsp of BBQ sauce and 1 tsp of BBQ seasoning. In the last 5 min of cooking add a sprinkle of cheese and drizzle BBQ sauce across the top. This also works well with brisket.

    Ham is a favorite in my house! My favorite ham recipe, probably because it’s one that I only make a few times a year/at holidays, is Bunwiches. A package of rolls (like Hawaiian Sweet Rolls) is cut in half, butter the bottom half, layer on ham and swiss or mozzarella cheese, top with the roll top, then pour over a mixture of butter, Worchestershire sauce, mustard powder, chopped onion and poppy seeds. Let it marinate (overnight if you can), then bake. So flavorful and yummy!

    I have made something similar to this, minus the salsa, in a muffin pan, baking at 350F for about twenty
    minutes. It makes a great breakfast or easy dinner. My husband and kids like salsa, so I’ll have to give this version a try. It looks good.

    Another way I like the do the ham and eggs is use slice ham in a muffin tin (each slice will make the “crust”). Add an egg or 2 to each cup, top w/ salt and pepper, and some shredded cheese and bake.
    Portable for busy days.

      I would try evaporated milk. That’s a great idea!But the salsa can for SURE make it more runny. You have to be conservative with the salsa.
