Wash Fresh Spinach First

When I was a little kid, I remember that cooking spinach for dinner was a big deal. All of the leaves had to be washed first to remove all the sand.

Those days are long gone because you can buy it washed and cleaned in the store and that is half the battle.

I still wash my fresh spinach but it doesn’t contain a lot of rubbage anymore. It also has a lot of health benefits like vitamins, iron, and minerals.

How To Cook Spinach

To make this recipe start by preheating a cast-iron skillet. Add olive oil to the skillet on medium heat.

Finely chop the onion and mince the garlic cloves and add to the skillet when the oil is hot.

Sauté the onion and garlic for about 1 minute to release the flavor and turn soft and translucent. Stir constantly to keep the onion and garlic from burning.

Add the spinach to the skillet and add a handful at a time use a wooden spoon to stir it through the pan so the spinach wilts, and cooks.

Keep on adding and stirring uncovered on medium-high so the spinach picks up the flavor of the garlic and onion.

Remove the skillet from the heat and let it sit for 2-3 minutes before you squeeze a touch of fresh lemon juice right out of the lemon on the spinach.

Stir to combine and add a pinch of salt and fresh pepper.
