Ingredients
- 1½ lbs 650 g boneless chicken thighs, sliced
- 1 (4 oz.) 1 (120 g) red bell pepper, thinly slicedred bell peppers, thinly sliced
- 3 tbsp 3 tbsp coconut oil
- 2½ tbsp 2½ tbsp garam masala seasoning
- 2 tsp 2 tsp turmeric
- 2 2 garlic clove, finely choppedgarlic cloves, finely chopped
- 1 tsp 1 tsp salt
- 1¼ cups 300 ml coconut cream or heavy whipping cream
- 3 tbsp 3 tbsp fresh cilantro, roughly chopped

Making low carb simple
Instructions
Place a large skillet over medium high heat and add the coconut oil.
When the oil is hot, add the garam masala, turmeric and garlic into the pan. Fry for a minute while stirring, making sure it doesn’t get burned.
Add the chicken and salt, then stir thoroughly. Fry for about 3 minutes before adding the bell pepper. Continue frying for about 2 minutes. Add the coconut cream and let it simmer, uncovered, over medium heat for 10 minutes.
Garnish with cilantro and serve.
Tip
To make cauliflower rice, just mince cauliflower florets into rice-sized pieces, then steam, or fry in butter until tender.
If making this recipe to freeze, use coconut milk as the cream base rather than heavy whipping cream.

This was so delicious. I made it with whole boneless thighs (I had forgotten to cut them into strips). It was easy. I loved it! I am not a cook. I live alone in NYC so ordering in is the norm. Or if I cook, I make the same sad grilled chicken breast with salad. I love this website and so glad I became a member. Next up: Keto pizza. I am saving so much money not eating out or ordering in.

Garam masala is fragrant and floral, but neither it nor turmeric are usually spicy.

Riced cauliflower has around 2 net carbs per 3/4 cup serving. You may determine what your portion is based on the rest of the meal and your carb threshold.

Tried it for the first time last night. So simple and hearty with a cup of cauliflower rice. Mine came out darker than the photo here, not sure why. I think it would be even better with some heat, which I'm going to try adding next time with ginger or something.

I just made this recipe and it tastes really good! I think garam masala just became my favorite spice 😛. My only issue was that when simmering the chicken in the coconut cream for a whole 10 mins, the cream evaporated almost completely and I ended up with a LOT of oil. I don’t think the same thing would happen if using heavy cream but then I feel like you wouldn’t get the same great flavor you get with the coconut. I’ll try simmering for less time next round. Definitely will make it again even if not doing Keto!

Andrea, most of the flavor comes from the Garam Masala seasoning, turmeric, and red peppers. I would check your Garam Masala seasoning to be sure it is flavorful.

I made this with double cream and added 1/2 tsp of curry powder to give it a tiny bit more of a kick it was delicious served with cauliflower rice, I chopped up half a tomato, an inch of cucumber and a few slices of spring onion to sprinkle on top just to have a bit of crunch, I love keto but I do miss the crunch of a poppadom. My non keto husband loved it too.

Yum! Quick and easy. Love it. Perfect mild spiciness for my taste. I didn't have enough cauli-rice, so I combined what I had with shredded cabbage. Delicious and instant favorite for me as written with coconut oil & coconut cream. Oh, except I didn't have any cilantro & didn't miss it.

WARNING! Ive made this recipe a few times, and love it! I've used the regular cream option, or coconut milk, and it's turned out delicious. I was never able to find "coconut cream" in the grocery store...until my most recent shopping trip. I bought it, happily...but didn't remember to READ THE LABEL! When I sat down to eat it...it tasted SWEET! Turns out I bought something that is probably used to make Pina coladas! I am an experienced cook and keto-er, and still made this mistake...so just a reminder to READ THOSE LABELS! I had thrown in some hot peppers, which helped offset the sweet, but ended up rinsing off all the sauce to try to get the sweet out. 🙁Such a bummer.

Oh I'm sorry that happened! The canned coconut cream is usually with the coconut milk in the Indian foods section of most grocery stores.
